For the Ueli's Gentian, the fresh gentian roots of the yellow gentian (Gentiana lutea) are used, which takes a lot of work.After the harvest, they are washed, checked, dried, crushed and carefully fermented in Willisau.The gentian mash is then distilled with a pure spirit.Approximately 100 kg of fresh gentian roots are required for 7 liters of gentian schnapps.
