Appearance Deep purple with a dense, dark core. Aroma / Bouquet Heady scented perfume of violet, cassis and smoky incense. Palate A beguiling array of purple berries, at once perfumed and succulent in the mouth. Boysenberry, mulberry and fruit of the forest offset by nuances of thyme. Compelling varietal typicity layered with whispers of smoky oak and fine cedar tannin structure. Intense concentration and incredible length from perfectly ripe High Eden cabernet sauvignon. Serve At room temperature 16-20°C Cellar Long term cellaring potential, peak drinking 2014-2034. Food pairing Richly flavoured dishes, red meats and game. Lamb, beef, venison, goat, pheasant. Red wine, earthy and reduction sauces. Mushroom, truffles, green beans, asparagus.

Altitude 460-515m Season An idyllic season of warm days and cool nights provided even ripening conditions. Outstanding fruit quality showing excellent depth and concentration. Winemaking Minimal intervention, destemmedand fermented on skins for 7 days with pump overs twice daily. Handcrafted in small parcels to exacting quality standards in our state of the art winemaking facility. Malolacticfermentation and maturation in barrel. Blended and lightly filtered before bottling. Maturation 21 months in 100% newFrench and American oak 300L barrels.
